Researcher and propagator of the history and culture of food. He is Head of the Culinary Heritage Centre at the Nicolaus Copernicus University in Toruń and a member of the Research Council of the European Institute for the History and Culture of Food (IEHCA) in Tours. He collaborates with various chefs and food producers and is the originator of the “Monumenta Poloniae Culinaria” series published by the Wilanów Museum.
